Texas-style barbecue comes to Canberra brewery with 500-gallon smoker

Big Box BBQ opens a summer pop-up at Capital Brewing from November 6 with a 500-gallon smoker.

Chef Michael Box is opening a Texas-style barbecue pop-up at Capital Brewing. Big Box BBQ has operated at Narrabundah shops for just over a year.

Big Box BBQ serves Wagyu brisket, pickles, sauce and white bread in classic Texas style. Box says the appeal is simplicity: quality ingredients cooked low and slow over live fire.

The pop-up starts November 6 and runs through summer. A 500-gallon smoker sits in a four-and-a-half-metre trailer.

Crews will lower it into the brewery's beer garden. The menu includes house-made pickles, honey cornbread with Crookwell honey, potato salad and glazed pork ribs.

Everything comes with bread, pickles and sauces as standard. Box, an Essex-born former executive chef at QT, has never been to Texas but fell in love with the style.

He sees it as a gap in Canberra's food scene since Smoque closed a decade ago.
