Muse Restaurant retains two hats and wins regional award after 18-year run
Troy Rhoades-Brown's Muse has held its two-hat rating for 12 years and won Regional Restaurant of the Year.
Troy Rhoades-Brown opened Muse in the Hunter Valley in 2009 during the global financial crisis, a bold move at 24. The restaurant earned its first chef hat in 2011, upgraded to two in 2015, and has kept them for 12 consecutive years.
This year it won the Sydney Morning Herald Good Food Guide's Regional Restaurant of the Year award. Rhoades-Brown's approach has shifted.
He tends a sprawling home garden with the equivalent of more than 100 raised beds, fruit trees, chickens, and composting systems. Produce travels from soil to plate within hours.
His opening course changes every service, reflecting what the garden offers that day.
