Winger Daniel Ellis scored in the seventh minute. Waratah added five more tries to build a big lead.
They have now beaten Raymond Terrace in 2024 and Dudley in 2025 in earlier deciders. Cardiff won the minor title but couldn't trouble Waratah when it counted most.
